I made some soy chorizo burger patties today. 

Recipe:

1 small shallot, minced
2 med sized crimini mushrooms, chopped small
1 med Roma tomato, cubed
1/2 cup soy chorizo (got this from Trader Joe’s)
1/4 cup garbanzo bean flour
2 Tbsp olive oil 
Pinch of salt

Sauté the shallot and mushrooms in olive oil with a pinch of salt (I used @heppssalt alderwood smoked salt) until the mushrooms soften. Add in the chorizo and tomatoes then cook until the tomatoes release their juices. Transfer mixture to a bowl then mix in the garbanzo bean flour. Divide mixture in half and form patties. Heat a skillet (I used the same one I made the mix in) with olive oil then cook the patties until they are brown on both sides. I put mayo, arugula, and tomato on my bread but you can do anything you like!

This is a quick and easy lunch or dinner idea. Try it out and let me know what you think! #vegan #recipe

Today I met the wife of the farmer that grows this Farro at @roanmills. This woman is also the mother to the farmer at @maggies_farm that I buy most of my greens for @suncafeorganicla.  To me that is so important.  A connection to our food is what is missing from our day to day lives. Quinoa from Bolivia?  Coconuts from Thailand?  What is the point?  There is so much happening in our own backyard that didn’t have to travel across the globe to make it’s way onto your plate.
